My Favourite Guacamole and Pico de Gallo

Sometimes I wonder who I love more – my guacamole or my husband? I raise one pondering eyebrow and make him a bowl. It’s a labour of love as I chop the fragrant cilantro, juice the sweet, tangy lime, and mellow as I mash the creamy avocado. As soon as it’s ready I feed my husband a scoop and watch him swoon…and then I know it’s him I love the most, of course! Hey, does he love my guacamole more than he loves me?

Guacamole

I used to mix my pico de gallo in with my guacamole but then I tasted the most delicious guacamole at La Cantina Mexicana in Streetsville. Since then, I’ve spent the rest of my guacamole-making days trying to replicate that smooth and luxurious, pure avocado dip that has a hit of garlic and is served with homemade tortilla chips and salsa on the side. Now I focus on the avocado and don’t get watered down by the tomatoes. Use firm but ripe Haas avocados; make sure the stem end yields to the gentle pressure of your thumb.

I prefer to serve my pico de gallo on the side; it’s easy to whip up since it uses some of the same ingredients. To have enough cilantro for both recipes, buy one large or two small bunches. I don’t use fresh jalapeno because I find the raw, crunchy bite of heat too jarring in a guacamole or pico de gallo. Green Jalapeño Pepper Tabasco Sauce gives me the flavour and heat I am looking for (and I ain’t ashamed to admit it) but switch out for the classic, fresh jalapeno if you like.

Guacamole

Makes 2 cups

This recipe is as close as I’ve come to the one we love at Cantina Mexicana. The guacamole can be made a few hours ahead, covered with plastic wrapped pressed on to the surface of the guacamole, and refrigerated.

Because the limes vary in size and taste buds vary in acidity tolerance, only add about two thirds of the lime juice initially; then taste the guacamole and add more juice as desired (I like to use it all). To get the most juice out of your limes, place your hand over the whole lime and lean down while rolling it around to soften it before you cut it open.

Ingredients:

3/4 teaspoon coarse salt
1 clove of garlic
¼ cup finely chopped fresh cilantro leaves
Few dashes of hot sauce (preferably Green Jalapeño Pepper Tabasco Sauce)
Juice of 1 ½ limes
3 Haas avocados, firm but ripe

Accompaniment:

Tortilla chips

Directions:

  1. Mince and mash garlic in the salt to achieve a purée; add to medium bowl.
  2. Add the cilantro leaves and a few dashes of hot sauce. Add about two thirds of the lime juice.
  3. Slice avocados in half; remove pit and discard. Empty pulp into bowl.
  4. For chunky guacamole, mash the avocado with a potato masher until you achieve desired consistency. For smooth guacamole, purée with an immersion blender.
  5. Taste and add more lime juice or hot sauce if desired.
  6. Serve with tortilla chips for scooping.

Pico de Gallo

Makes 1 cup

My Spanish sister-in-law, Marie, converted me from jarred salsa to fresh pico de gallo with the spicy and refreshing pico de gallo she lovingly prepares for our clan when we gather at her pool in the summer. It’s a real treat; your guests will feel the love. Pico de gallo can be made up to a few hours before serving; any longer and the tomatoes breakdown and release too much of their juices.

To prevent my pico de gallo from becoming too watery, I’ve tried seeding my tomatoes first but the tomatoes lost some of their flavour and broke down too much. I also tried a technique I read about on the internet: chopping the tomatoes whole (including the seeds), placing them in a fine-mesh strainer set over a bowl, sprinkling them with salt, and leaving them to drain for about 30 minutes. But the results lacked a fresh tomato flavour, tasted bitter, and had a weird texture. So I just dice up the whole tomato, seeds and all, and love my pico de gallo for what it is: juicy and flavourful.

Use the ripest, locally-grown or homegrown tomatoes you can get your hands on – it doesn’t matter what size, along as you end up with 1 cup of diced tomato. If it is not tomato season, use roma tomatoes.

Ingredients:

1 cup diced ripe tomatoes (locally-grown or roma tomatoes)
½ cup minced white onion
2/3 cup finely chopped fresh cilantro leaves
Several dashes of Green Jalapeño Pepper Tabasco Sauce
Juice of ½ lime
½ teaspoon coarse salt

Directions:

  1. Add tomatoes to a medium, non-reactive bowl.
  2. Add remaining ingredients and toss gently.
  3. Let rest for 15 minutes and then serve with tortilla chips for scooping or cover in an airtight container and refrigerate up to a few hours.

Easy Summer Entertaining: Spieducci from Aurora Meat & Cheese

Season both sides of the lamb skewers with freshly ground black pepper and grill them over low heat for just a minute or two on both sides (they are thin); then sprinkle with crunchy sea salt and serve hot on a platter garnished with baby arugula.

Aurora sells special spieducci grills that prevent the wooden skewers from burning on the ends. We don’t own a spieducci grill but get excellent results grilling our spieducci straight on the barbeque. The ends of our skewers get a little charred but the meat is mouth-watering.

Seafood Feast: Port Credit’s Picturesque Snug Harbour

Have you been to Snug Harbour lately? Recently renovated, modern lux decor; spacious, open dining room and sweeping, waterside covered patio. Great new menu. Seafood and sailboats on a sparkling summer’s eve: the perfect spot for a celebration meal.

Deep-fried Calamari: golden and crunchy. Served with a gorgeous cayenne, lemon, and garlic-spiked mayonnaise.  Somebody’s fingers just couldn’t wait ‘til after the photo.

Raw Malpeque Oysters on the half shell in their own liquor: fresh, clean, pure. My first time slurping raw oysters – what took me so long? Served with traditional seafood sauce and horseradish.

Tuna Martini: stunningly presented, seared Ahi tuna, crusted in sesame pepper. Delicious dipped in soy-based sauce, hot sauce, and herb oil. Served on a bed of greens with hoisin, wasabi, pickled ginger, and seaweed salad.

Roasted Beet Salad: fresh baby arugula, tender roasted beets, crumbles of soft, creamy chèvre. Spot-on balanced, sweet honey vinaigrette. Enough to share as a starter; or add Blackened Shrimp and call it a meal. Consistently good – my favourite local beet salad!

Brown Butter Lobster Sandwich: East Coast lobster mixed with mayonnaise, red peppers, and celery. Stuffed into two toasted buns. Served with Caesar salad (or market salad or fries). Good and gobbled before I could plead for a bite.

Seafood Bouillabaisse: a steaming pot of fresh fish, shrimp, mussels, and clams poached in a flavourful and spicy roasted tomato fennel broth. Served with bread for mopping up every last drop. My husband had already dug in before I could take the photo. And who could blame him?

Sea Scallops: four East Coast sea scallops, bronzed and lightly crusted on the outside; perfectly cooked, tender sweetness on the inside. Sitting in a pool of sublime Meyer lemon lobster butter sauce: nutty richness balanced by the sweet tanginess of Meyer lemon. Served with nicely seasoned rice and flavourful julienned vegetables.

Snug Harbour doesn’t take reservations on the weekends. We arrived early (at about 5:30 p.m.) on a sunny Friday, asked for a table inside, and got one right away (outside was a different story). Though the place was bustling, the service was fast, friendly, and efficient.

A Visual Feast: Edible Flowers

I thought I’d share a little inspiration with you – some photos of edible flower ideas that I have collected and pinned to my Olive Edible Flowers board on Pinterest. I haven’t tried the recipes yet but the photos give me an idea of how I can use edible flowers in my own cooking.

They inspired me to add flowers from my garden to a simple tomato mozzarella salad I saw on a Barefoot Contessa episode, prepared by a California chef. I think the yellow pansies look so pretty against the orange and red wedges of heirloom tomatoes. I love the casualness of the torn pieces of fresh mozzarella tucked in between the tomatoes. I didn’t have time to make the basil-infused olive oil they used on the show, so I drizzled the salad with my best extra-virgin olive oil and added whole basil leaves for drama and ease. I thought a jolt of black and a touch of saltiness would be nice, so I scattered on a few sundried black olives (you can find them at Adonis or Longo’s – check my grocery store directory for locations). Don’t forget to season with salt and pepper.

Look at these beautiful zucchini blossoms from Hutchinson Farm in Burlington (thanks for permission to share your photo, David). Find out why they are picked to order at dawn (call a day ahead), plus helpful tips here. Hutchinson Farm suggests using them in cheese quesadillas. I saw a great recipe for Squash Blossom Quesadillas on one of my favourite cooking shows, Pati’s Mexican Table, and have pinned the recipe to my Olive Edible Flowers Pinterest board, along with stuffed zucchini blossom recipes. Zucchini and pumpkin blossoms will be ready at Hutchinson Farm in Burlington near the end of July. In May, Hutchinson Farm also sells nasturtiums which David says are “an awesome edible flower”.  Contact Hutchinson Farm for more information.

Last summer, I found zucchini blossoms at Mississauga Central Farmers` Market. And Longo`s carries zucchini blossoms when in season (soon) and can get edible flowers in pretty much all year round. If you don’t see them in the produce section, speak to the Produce Manager; he may be able to order them in for you.

Your own garden can be a great source for edible flowers; just be sure they are organic and verify they are edible by checking with a reliable source before serving them.

Easy Summer Dinner: Michael-Angelo’s Sumptuous Crab Cakes

The cats are away so this mouse spent a busy afternoon testing recipes. After, I slipped out on to the patio (leaving my kitchen disaster behind me) and treated myself to a simple but sumptuous dinner: a Snow Crab Cake from Michael-Angelo’s grocery store. I like it cold on a bed of mixed greens with herbs, topped with chopped avocado, and squirted with lemon.

A dollop of cocktail sauce adds a classic, tangy bite. Amp up the wow factor even more with a hit of zingy cilantro pesto (Jamie Oliver’s Coriander and Cashew Pesto is brilliant) mixed with crème fraiche (both sold at Michael-Angelo’s) or mixed with creamy labneh (Middle Eastern strained yogurt that you can make yourself or purchase from Adonis).

Michael-Angelo’s Snow Crab Cakes are made in-store. A thin layer of light, crunchy breading embraces a generous mound of delicate, sweet crab flecked with minute pieces of sweet peppers and parsley.

Snow Crab Cakes are available year round in Michael-Angelo’s prepared food counter. The quality has been consistently great. The ladies behind the counter tell me that their Portuguese Cod Cakes are also delicious. Well done ladies!
